I'm glad to be updating with more cooking stuff on here! I have been busy with a lot of other stuff like my Apartment Jungle Project and my Balcony Garden Project. On top of that, the Zero Waste Lifestyle is making it really hard for me to re-create recipes because many ingredients come in plastic (yes, even those fresh ones). I will have to work around some of the recipes.
Good news is that this recipe only requires 3 ingredients - which is olive oil, garlic and TIME. It is simple and easy. Roasted garlic is becoming one of my kitchen staples because you can make a variety of dishes with it! All you have to do is just cook 2 and 1/4 cup of olive oil (I use extra light olive oil) and 30-40 large peeled garlic cloves for about an hour on low. It is simply just done on the stove. Let it cool for a minimum of 2 hours or overnight and you can keep it in the fridge. The recipe recommended to only keep it for a week in the fridge but I've kept it for about a month and it was still ok.

What I Love to Make with Garlic Oil:
Roasted Potatoes! It's the ONLY dish I make it with. The best thing is that I can still get the garlic flavour without having to peel more garlic. I assume it would taste as good with other roasted vegetables but I haven't tried it. What else do people use garlic oil for? Let me know in the comments!
