One thing that I absolutely cannot get tired of are omelets! Just recently, I've started adding tomatoes and spinach to my omelets and they are super yummy. All you need are 2 eggs (or 1 whole egg+1 egg white), 1 cup of spinach, half a tomato, onions and some salt&pepper for taste. Viola~! You are done, perfect for meals anytime of the day.
