I really love this pancake, I could eat it everyday. My instagram is filled with pancake photos for almost every morning.
This is basically all the ingredients that you need:
3/4 cups of oat bran
1 tbsp of organic sugar
1 tbsp of fresh yogurt
For those looking out for their cholesterol levels, you can use 2 egg whites instead of a whole egg. If you dont want to add sugar too, its okay because the banana is already sweet enough. You don't need to add any other liquid into the batter because the egg and the banana makes the batter just nice to cook. If the batter is too watery, the batter won't cook into a pancake.
I use my favorite cooking spray (Extra Virgin Olive Oil!) but if you dont have it, it's okay. Just put a few drops into a pan and wipe the pan with tissue :)
Take 1 tbsp of the batter and make it into a round shape. Once both sides are brown, your pancakes are done!
I usually lightly spread peanut butter on top of each pancake because PB and banana taste so magical together. And I topped it off with some raisins or nuts/seeds, add a side of fruit and whatever healthy things I have in the kitchen. And tadaa! Breakfast is served.
